Lemon Herb Avocado Caprese Cups!

  • 1 cup Galbani® Fresh Mozzarella Medallions
  • 12 Cherry Tomatoes
  • 4 Basil Leaves
  • 24 Basil Leaves
  • 1/2 tsp Salt
  • 1 Avocado
  • 1 tsp Lemon Zest
  • 1 Lemon's juice
  • 1 Shallot, minced
  • 1 clove Garlic, minced
  • 1 tbs Fresh Thyme Leaves


  1. Cut tomatoes in half, seed & scoop out the center.
  2. Salt tomatoes & place upside down in a strainer to allow excess water to drain. cut avocado in half & remove pit.
  3. Scoop out avocado & place in a medium bowl. Add lemon zest, juice, shallot, garlic & thyme.
  4. Chiffonade basil leaves & add to the bowl.
  5. Blend well.
  6. Fill tomatoes with avocado mixture.
  7. ?Top with Galbani® Mozzarella Fresca™ Medallions™ & garnish with small basil leaves.

This recipe is the perfect appetizer for summer dinners! They are so simple to make & can be made ahead of time. Small bite sized tomatoes that are delicious & packed with wonderful flavors that pair together perfectly!
