Caribbean Crab Salad in Endive Spears with Feta

  • 8 oz. Président® Feta Chunk
  • 1 lb. Fresh Packed Crab
  • 1 cup Grilled Pineapple, diced
  • 1 Red Pepper, diced
  • 4 Green Onions, sliced
  • 1 Avocado, diced
  • 1/2 cup Cilantro, chopped fine
  • 1/2 cup Mint, chopped fine
  • 1 tbs Lime Zest
  • Lime Juice
  • Olive Oil
  • Salt and Pepper, to taste
  • 2 Belgian Endives


1. Gently toss crab with grilled pineapple, red pepper, green onions, the herbs, lime zest, lime juice, oil and salt and pepper to taste.
2. Spoon crab mixture in endive spears. Sprinkle with diced avocadoes, and Président® Feta.
