Skinny Feta Rhubarb Salad with Walnuts

  • 1/2 cup Président® Fat Free Feta, crumbled
  • 2 cups Rhubarb, chopped
  • 2 tbs Sugar
  • 8 cups Mixed Salad Greens
  • 1/4 cup Chopped Walnuts, toasted
  • 1/4 cup Golden Raisens
  • 8 tbs Balsamic Vinaigrette


Preheat oven to 450 degrees.

Toss rhubarb with sugar in medium bowl until evenly coated. Let stand for 6-7 minutes. Spread on a baking sheet and roast for about 5 minutes, or until beginning to soften. Let cool.

Divide mixed greens onto serving plates. Divide rhubarb, President® Fat Free Feta, walnuts, and golden raisins onto salads.

Drizzle each with 2 tablespoons of balsamic vinaigrette.
