Skinny Feta with Quinoa Tabouli

  • 4 oz. Président® Fat Free Feta
  • 1 cup Quinoa
  • 1 cup Tomatoes, diced
  • 1 Cucumber, diced
  • 4 Green Onions, chopped
  • 1/2 Mint, chopped
  • 8 tbs Balsamic Vinaigrette


Add 1 cup quinoa and 2 cups water to a saucepan and bring to a boil. Cover and simmer for 10-15 minutes or until all water is absorbed.

Remove quinoa to a salad bowl and let cool for 5 minutes.

Add tomatoes, cucumber, green onions, and mint to bowl.

Pour dressing over quinoa salad and toss to coat. Sprinkle with Président® Fat Free Feta.

May serve with sliced chicken or tofu.
