Skinny Feta, Watermelon & Pea Salad

Ingredients

  • 4 oz. Président® Fat Free Feta
  • 1 cup Lentils
  • 1 cup Green Peas
  • 1 cup Watermelon, cubed
  • 1/2 cup Parsley
  • 4 cups Romaine Lettuce
  • 8 tbs Raspberry Vinaigrette
  • Salt and Pepper

Directions

Place 1 cup lentils in large saucepan. Add 2 cups water and bring to a boil over medium-high heat. Cover, reduce heat, and simmer for 15 minutes or until done.

Add peas to lentils and cook until tender. Drain and rinse lentil mixture with cold water.

Combine lentil mixture, watermelon, chopped parsley, and salt & pepper.

Arrange romaine lettuce in salad bowls. Top with portioned lentil mixture. Garnish with Président® Fat Free Feta.

Serve with raspberry vinaigrette.
