Chicken Parmesan

  • 12 oz. Sorrento® Fresh Mozzarella, thinly sliced
  • 6 Skinless Boneless Chicken Breasts, pounded
  • 2 Eggs, beaten
  • 1/2 cup Parmesan Cheese
  • 2 1/2 cups Bread Crumbs
  • 4 tbs Olive Oil
  • 4 cups Marinara Sauce
  • 1/4 cup Parsley, chopped
  • Salt and Pepper, to taste


1. Preheat oven to 400 degrees F.
2. Season chicken with salt and pepper on both sides.
3. Dip the chicken breast in eggs mixture and dredge in the crumbs pressing lightly until coated.
4. Heat 4 Tbs. oil in a large non stick skillet until hot and cook 3 of the breasts on each side, 2 to 3 minutes or until golden brown. Repeat with remaining chicken.
5. Transfer chicken to a baking dish in a single layer. Top each one with some of the tomato sauce and a few slices of the fresh mozzarella cheese. Sprinkle on the remaining Parmesan cheese.
6. Bake for 15 to 20 minutes until the chicken is cooked through and the cheese is melted.
7. Remove from oven and garnish with parsley, serve.
