White Pizza with Ricotta, Onions, and Pesto

  • 1 lb. Sorrento® Ricotta
  • 1 1/2 lb. Pizza Dough
  • 1/3 tbs Thyme, chopped
  • 1 medium White Onion, sliced
  • 1/4 cup Pesto


1. Preheat oven to 500 degrees F.
2. Spread ½ cup white sauce over surface of dough leaving ½ inch border from crust.
3. Combine 1 ¼ cup of ricotta with thyme, salt and pepper. Stir to blend.
4. Spread 1 ¼ cup of ricotta mixture over the white sauce.
5. Arrange the roasted onions over the ricotta mixture.
6. Drizzle the pesto over the ricotta and onions.
7. Bake for 12 minutes.

White Sauce Ingredients:
¼ cup olive oil
1 cup onion, finely diced
2 garlic cloves, finely chopped
½ cup heavy cream
1/3 Tbs. fresh thyme, chopped
Salt and black pepper, to taste

White Sauce Directions:
1. Heat oil in small skillet; add onion and garlic until soft and translucent. Stir in cream; bring heat to a simmer and cool until sauce thickens.
2. Remove from heat. Add thyme and season with salt and pepper. Cool and set aside until ready to use.


Roast the sliced onion in oven at 400 degrees F until golden brown before baking pizza.
