No matter what you're making, make it delicious with great cheese
Fresh Mozzarella Pasta Salad
- 12 oz. Sorrento® Fresh Mozzarella, cubed
- 16 oz. Piccollini Bow Tie Pasta
- 1/4 cup Olive Oil
- 1/4 cup White Vinegar
- 1/2 cup Honey
- 2 tbs Yellow Mustard
- 1/2 tsp Crushed Red Pepper
- 12 oz. Spinach, fresh
- 15 oz. Northern White Beans
- 1 Red Onion
- 1 Sweet Red Pepper
- Salt and Pepper, to taste
Cook pasta as directed, drain, cool, set aside. In mixing bowl combine oil, vinegar, honey, mustard, red pepper fl akes, salt and pepper. Whisk together. Wash and then blanch spinach in hot water, drain, and chop. Drain and rinse beans. Dice onion, sweet red pepper and fresh mozzarella cheese. Add all ingredients to dressing and toss.
Serve as a salad, side dish or add grilled chicken or shrimp to serve as an entrée.
