Skinny Gnocchi with Spinach and Mozzarella

Fill a large pot with water and bring to a boil. Add gnocchi and cook about 3 minutes, or until they float to the top. Stir to prevent sticking. Drain and set aside. Heat the olive oil in large pan on medium-high heat for 2 to 3 minutes. Add garlic and sauté for 30 seconds. Add spinach and toss. Stir in half the mozzarella. Add wine and cook for 1 minute. Add remaining mozzarella and ricotta and combine well. Add gnocchi. Transfer to a serving bowl. Serve with chopped chives.


By using the fat-free ricotta and part skim mozzarella, this recipe has 14% less calories and 6% less fat per serving.*
