Mozzarella Stuffed Peppers

  • 1 tbs Olive Oil
  • 1/2 lb. Mexican Style Chorizo
  • 1 Jalepeno Pepper, minced (optional)
  • 1 Red Onion, diced
  • 1 Green Bell Pepper, diced
  • 2 tbs Garlic, minced
  • 1 cup Basmati or Texmati Rice
  • 1 cup Chicken Stock
  • 1/2 cup Mild Salsa
  • 1/2 cup Water
  • 1 Yellow Bell Pepper
  • 1 Orange Bell Pepper
  • 1 1/2 cup Sorrento® Mozzarella


In a medium saucepan, heat oil and chorizo, cook for 3 minutes. Add jalapeno, onion, pepper and garlic. Cook until translucent, then add rice, coating all grains with oil, and cook for 1 minute. Add all liquids, stir and bring to boil, then cover and reduce heat to low. Check rice for doneness after 20 minutes.
