Warm Tortellini - Asparagus Salad

  • 1 cup Sorrento® Mozzarella, shredded
  • 1/2 cup Sundried Tomatoes, chopped
  • 1 tsp Olive Oil
  • 1/4 tsp Lemon Pepper
  • 9 oz. Lemon-Chicken Tortellini (Refrigerated)
  • 1/2 lb. Asparagus, cut in pieces
  • dash Cayenne Pepper
  • Salt, to taste


In a bowl, combine cheese, tomatoes, oil, salt, lemon pepper and cayenne pepper; set aside. Cook tortellini according to package directions, adding asparagus pieces during last half of cooking time; drain. Add tortellini and asparagus to cheese mixture in bowl. Toss to combine


Any tortellini flavor can be used
