Stuffed Hot Peppers
- 12 Banana Peppers
- 2 cups Sorrento® Mozzarella, shredded
- 2 cups Sorrento® Ricotta
- 1 tbs Anchovies, chopped
- 1 cup Bread Crumbs
- Parsley, chopped fine
- Salt, to taste
- Ground Black Pepper, to taste
Cut off tops of peppers and remove cores. In bowl mix all ingredients. Roll cheese mix into log shape and insert into peppers. Put on cookie tray covered with oil and bake at 400° F until peppers look roasted and cheese is melted.
