Le Châtelain Featured Cheeses


Le Châtelain was recently awarded one of the highest honors that can be bestowed upon a cheese: a Gold Medal from France’s biggest food competition, the Concours General Agricole held at the Salon International de l’Agriculture in Paris earlier this year. Chosen from among 17,000 French food products and judged via uncompromising standards of quality and taste, the Gold Medal is a major achievement for any fromager. However, this award is remarkable for Brie Le Châtelain because it was crafted especially for the U.S. market, using pasteurized milk. As anguished cheese-loving Americans can attest, the FDA has imposed strict regulations requiring that raw milk cheeses imported to the U.S. must be aged for at least 60 days. Therefore brie, which needs only four to five weeks to ripen, must be made with pasteurized milk to be sold in the United States. We took great care to develop a cheese that embodies the very same luscious, complex taste of raw milk brie.


Brie - 3kg

Le Châtelain Brie 3kg comes from the pastures of the Vosges Mountain region of France, which is inhabited by free ranging herds. Alongside the Swiss and German borders, it is an area of spectacular natural beauty, filled with pine and silver birch forests, waterfalls and streams and high rounded peaks.

Chosen from among 17,000 French food products and judged via uncompromising standards of quality and taste, the Gold Medal is a major achievement for any fromager. However, this award is especially remarkable for Brie Le Châtelain because it was crafted especially for the U.S. market, using pasteurized milk. Though most cheese experts believe it is impossible to re-create the same rich, nuanced flavor using pasteurized milk, Brie Le Châtelain has done it, beating out many competitors.

Taste and texture

Made with the same genuine and traditional recipe used by our French master cheese-makers for generations, Le Châtelain brie is made from 100% pasteurized rBST-free cow's milk. This delicious cow's milk cheese typically has a soft, white, bloomy rind, a luxurious ivory paste and a rich, buttery flavor.

Wine and food pairing

Pair it with a full-bodied red wine like Cabernet. You can also enjoy it with Chardonnay, and sparkling wines. Brie Le Châtelain is famous with baguette bread or on crackers. It is also excellent served with fruits or nuts. The cheese is equally delightful when heated; try it barely melted, topped with preserves, or wrapped in puff pastry.


Brie 8oz

Our brie Le Châtelain comes from Normandy. Located in the Western part of France, this region is rich in green pastures thanks to a climate that allows for rain over 200 days per year. Normandy has an ancient tradition of raising dairy cows. Since the Middle Ages, proud breeds like “Vache Normande” have been producing milk used in the making of some of the most renowned AOC cheeses of France, especially washed-rind varieties and of course, Camembert.
